In 1997 Jan and Jorg Gartelmann established an olive grove of more than 800 trees in their vineyard. To reduce the wating period before the trees could be harvested, advanced trees (2 years old) were planted. Three varieties were planted; Manzanillo, Corregiola and Paragon. Manzanillo This green olive originates in Spain in the Andalousia district. It is medium sized with a flavour reminiscent of almonds. These are our pickling olives but they are a dual purpose olive (we do not use them for oil as it is not well suited in the Hunter). Pickling is done in salt and water and NO caustic soda is used. (Caustic soda is used for commercial olives as it quickens the process but we don’t like it and we want to be as natural as possible.) The pickling olives also have a little chilli and garlic. It takes about 3 months for the olives to be ready to eat after they have been in the brine. Corregiola and Paragon These are our oil olives. The olives are hand picked and
processed within 24 hours which means the oil is fresh and retains its
fragrance and flavour. Our olive oil is extra virgin and is cold pressed
and the first pressing. |
